County Captain Chicken with Rice Recipe

Ingredients:

  1. 2 cups sliced shiitake mushrooms
  2. 1 cup chopped onions
  3. 1/2 cup chopped celery
  4. 1 clove garlic, minced
  5. 1 LB (450 g) boneless, skinless chicken thighs, trimmed of all fat and cut into bite-size pieces
  6. 1 tbsp flour
  7. 1/4 cup fat-free chicken broth
  8. 1 1/2 tsp curry powder
  9. 1 tsp salt
  10. 1/4 tsp pepper
  11. 1/4 tsp paprika
  12. 3 cups canned crush tomatoes
  13. 1/4 cup golden raisins
  14. 2 cups cooked brown rice

Methods:

  • Coat a large skillet with cooking spray.
  • Add mushrooms, onion, celery and garlic and sauté until vegetable are tender, about 5 minutes.
  • Place vegetables in slow cooker; add chicken.
  • In a cup, stur together flour and chicken broth until smooth. Add to slow cooker.
  • Add curry powder, salt, pepper, paprika, crushed tomatoes and raisin. Stir in.
  • Cover and cook on LOW for 5 hours.
  • To serve, spoon 1/2 cup rice onto each of 4 plates. Top each with chicken and sauce and serve. Yields 2 1/2 cups chicken mixture and 1/2 cup rice per serving.
