Tuscan Pasta Recipe

Ingredients:

  1. 1 pound boneless chicken breasts, cut into 1 inch
  2. 1 can (15 1/2 ounces) red kidney beans, rinse and drained
  3. 1 can (15 oz each) Italian-style stewed tomatoes
  4. 1 jar (4 1/2 oz) sliced mushroom, drained
  5. 1 med. green bell pepper, chopped
  6. 1/2 cup onion, chopped
  7. 1/2 cup celer, chopped
  8. 4 cloves garlic, minced
  9. 1 cup water
  10. 1 teaspoon dried Italian seasoning
  11. 6 oz thin spaghetti, broken into halves

Methods:

  • Place all ingredients except spaghetti in slow cooker.
  • Cover and cook on LOW for 4 hours or until veggie are tender.
  • Turn tu HIGH.
  • Stir in spaghetti; cover.
  • Stir again after 10 minutes.
  • cover and cook 45 minutes or until pasta is tender.
  • GArnish with basil and bell pepper strips, if desired.

Make 8 servings.
