Chicken Zucchini with Pine Nuts


1 skinless, boneless chicken breast
2 tsp extra virgin olive oil
1 tbsp soy sauce
1tbsp water
1 zucchini
1 tomato
1 tbsp balsamic vinegar

First sauté the chicken in 1 tsp olive oil, when it's partially cooked add soy sauce and water. Slice the chicken when it's done.

Then slice the tomato and zucchini and sprinkle the slices with vinegar, olive oil, salt, and pepper.

Top it off with the chicken and pine nuts.

This will make 1 serving. Simply double or triple the ingredients to make more. This recipe should take 10 minutes to prepare and 10 minutes to you'll have dinner on the table in 20 minutes! Not bad!
