Fried Rice Recipe Made Easy

If your recipe for perfect fried rice is breathing fire, a la Chinese dragon, then here's something that could assuage your fears. For starters, this recipe is not as complicated as it is made out to be. Half the battle is won if the rice is prepared before the final touches are given.

The vegetables that form an inalienable part of this dish must be chopped very finely. This ensures that they get cooked completely. Of course, like all other spicy Oriental treats, this one too needs to be cooked on a very high flame accompanied with constant and very vigorous stirring.

Your Guests Will Lap It Up

Here's a rice recipe that will fire the imagination of all your guests like no other. The jamboree starts with:


Basmati rice- 2 cups
2 carrots
A bunch of spring onions
100 grams fresh beans
100 grams cabbage
1 red capsicum
1 green capsicum
2-3 green chilies, cut length-wise
1 teaspoon ginger finely chopped
1 teaspoon garlic finely chopped
2 tablespoons soya sauce
1 teaspoon white pepper powder
Salt
1 tablespoon vinegar
3 tablespoons oil

Wash and soak the rice in cold water for about 20 minutes. Cook the rice till tender. The rice should not be overcooked, and each grain must be separate. Keep it cool.

Chop all vegetables into thin, long strips. Heat oil in a sauce pan and add all the diced vegetables. Fry on high flame for 6-7 minutes. Here again, the trick is to retain their crispiness. Mix all the seasonings and stir well.

Add rice to this sautéed mixture. Serve hot in style with an array of sour vegetables, and not to forget, your eloquent expression of grace and charm.
