1 tbsp olive oil
1 large onion - peeled & chopped
200g canned sardines
3 potatoes - boiled, peeled & mash
Salt and pepper to taste
1.5 tbsp sweet relish
2 limes - juice
2 cups breadcrumbs

Heat olive oil in a pan. When hot, stir-fry onion until soft, and then add in
Add in mash potatoes and season with salt and pepper. Remove from heat.
Add in sweet relish and lime juice. Allow to cool for about 5 minutes.
To make croquettes, shape the mixture into oval.
Place breadcrumbs on a plate.
Lightly beat egg in a bowl. Dip each croquettes into the egg to coat completely, and then roll lightly over crumbs. Place on a tray and chill in the fridge for about 30 minutes.
Heat cooking oil in a pan. Deep fry croquettes until golden brown and crispy. Drain on paper towels. Serve with mayonnaise or thousand island sauce.
